Easy & Delicious Roasted Pumpkin Soup

This is a super easy, quick and delicious winter warming soup that the kids love. With a great mix of veggies and flavours you can customise to your own taste or follow the recipe below. Enjoy!

Ingredients:
1 large sweet potato peeled and chopped
2 Granny smith apples peeled and chopped
1 half butternut pumpkin peeled and chopped
1 red onion peeled and chopped
2 cloves garlic peeled and chopped
2 medium carrots peeled and chopped
1 lt boiled water or stock
Herbs to taste (oregano, rosemary, sage, thyme) or stock powder
Salt to taste
Cream to serve
Method:
Chop all vegetables and apples and place into a roasting pan with a drizzle of olive oil. Roast for 30-40 minutes on 180 degrees Celsius, depending how thick or thin you have chopped the veggies.
Boil 1 lt of water or stock if using liquid stock (less if adding milk or cream).
Once vegetables are roasted and soft remove from the oven and transfer to pot or bowl to use an immersion blender.
Blend all the vegetables until smooth slowly adding in your liquids, salt to taste and herbs.
Serve as is or with crusty bread or a dash of cream.
