This is a great refreshing blend using local honey as the sweetener. It is easily customised to suit personal tastes and best of all local honey is a great Hayfever remedy! Prep time 15 minutes.

Serve Chilled with ice or Warm

Ingredients:

3 x Fresh passion fruit ( or frozen equivalent)

2 x Lime

2-3 Tbs Local Honey

500ml Boiling water

Method:

In a heatproof jug add your honey and lime juice. Pour in half of your boiling water and stir until all the honey is dissolved. Depending on your personal taste you can add lime zest/peel also at this point.

Next add in your passion fruit pulp and the remaining water. Transfer to your serving jug if serving warm. If serving chilled reduce the amount of boiling water and substitute with cold water and ice.

Best consumed within a few days if stored in the fridge. Left over tea can be frozen in a ice cube trays and defrosted to be used at a later day or blended into mocktails/cocktails.

Enjoy!
