This is a great refreshing blend using local honey as the sweetener. It is easily customised to suit personal tastes and best of all local honey is a great Hayfever remedy! Prep time 15 minutes.

Ingredients:

I cup frozen berries

2 x Lime

2-3 Tbs Local Honey

1 cup Boiling water

3-4 cups Cold water + Ice

Method:

In a heatproof jug add your honey and lime juice. Pour in your boiling water and stir until all the honey is dissolved. Depending on your personal taste you can add lime zest/peel also at this point.

Next add in your raspberries and cold water. Transfer to your serving jug with ice. Depending on your taste preferences if it is too concentrated add more water.

Best consumed within a few days if stored in the fridge. Left over tea can be frozen in a ice cube trays and defrosted to be used at a later day or blended into mocktails/cocktails.

Enjoy!
